Fennel Citrus Salad

This fennel citrus salad isn't your average salad -- it's light, simple and best enjoyed al fresco.

1 fennel bulb

1 orange 

3/4 cup olive oil 

2 tablespoons red wine vinegar 

1/2 teaspoon whole mustard seeds 

Pinch salt 

Pinch black pepper 

1 teaspoon fresh marjoram  

1 teaspoon fresh oregano 

1 teaspoon fresh sage

Orange zest

Parmesan cheese shavings 


  1. Thinly slice the fennel, peel and section the orange and add all to a mixing bowl.
  2. Combine the olive oil, red wine vinegar, mustard seeds and salt in a mason jar or other jar with a tightly fitting lid and shake to combine. Toss the fennel and orange with the dressing. Transfer the salad to a plate or shallow bowl and garnish with fennel fronds and small fresh marjoram, oregano and sage leaves. Finish with some orange zest and long thin slices of Parmesan on top.
