Fruit Skewers with a Whole-Wheat Quesadilla

Ingredients

For the apple and Cheddar quesadillas:

1 1/2 cups shredded sharp Cheddar cheese

6 whole-wheat tortillas 

1 large Granny Smith apple, cored and thinly sliced 

1 tablespoon olive oil 

For the rainbow skewers:

4 to 6 strawberries

1 large orange, sliced into wedges 

1/2 pineapple, cored and cut into chunks 

1 kiwi, peeled and cut into wedges 

4 to 6 blueberries 

4 to 6 purple grapes 

Directions

  1. To make the quesadillas, add 2 tablespoons of the cheese over half of 1 tortilla. Arrange a few apple slices, slightly overlapping, on top of the cheese, then sprinkle 2 more tablespoons of the cheese over the apples. Fold the tortilla in half. Repeat with the remaining cheese, tortillas and apple.
  2. Heat a large skillet with the olive oil over medium-high heat. Arrange 2 quesadillas in the skillet without overlapping and cook, carefully flipping once, until the cheese is melted and tortillas are golden brown on both sides, 2 to 3 minutes per side. Repeat with the remaining quesadillas. 
  3. Wash and slice all of the fruit, as necessary. Thread the fruit onto 4 to 6 skewers, in rainbow order. 
  4. Place the quesadillas and fruit skewers in individual lunch boxes and store in the refrigerator.
