Garlic and Herb Sweet Potato Fries

Fries couldn't get any more delicious or easier to make (and eat!) than these healthy baked sweet potato fries. They make a great side dish but also work as a light meal.

Ingredients

1 to 2 large sweet potatoes

2 tablespoon olive oil 

Kosher salt and freshly ground black pepper 

3 tablespoon grated Parmesan 

2 tablespoon fresh flat-leaf parsley leaves, chopped 

1 clove garlic, minced 

Directions

  1. Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper.
  2. Slice the unpeeled sweet potatoes into 1/4-inch thick batons (fries). 
  3. Place the sweet potatoes on the prepared baking sheet and toss with the olive oil, 1/4 teaspoon salt and 1/8 teaspoon pepper until evenly coated. 
  4. Bake until golden brown and starting to burn on the edges, 20 to 25 minutes, tossing the fries once after 10 minutes. 
  5. Meanwhile, combine the Parmesan, parsley and garlic in a small bowl. 
  6. Remove the fries from the oven and top with the Parmesan mixture. Serve immediately.
