Green Cactus Juice

Have a green juice obsession? Switch things up by adding cactus for extra refreshment. Don't worry, it won't prick.

Ingredients

1 fresh cactus paddle (nopal)

Handful of fresh flat-leaf parsley 

Handful of fresh cilantro 

3/4 cup chopped pineapple 

1/2 cup to 3/4 cup orange juice 

1 mini cucumber, peeled and chopped 

Ice, for serving 

Directions

  1. Peel the outside of the cactus paddle with a vegetable peeler to remove any thorns, then cut the cactus into bite-size chunks.
  2. Place the cactus in a blender along with the parsley, cilantro, pineapple, orange juice and cucumber and blend until smooth. Pour over ice (strain, if you want pulp-less juice) and serve.
