Guilt-Free Mocha Smoothie

With chia seeds and cacao nibs, this frozen coffee drink is not only tasty, but healthy too.

Ingredients

Red Eye Ice Cubes:

1 cup brewed coffee

1 shot espresso 

Smoothie:

1/4 cup chia seeds

1 cup plant-based milk, divided

1/4 cup raw cacao powder 

1 teaspoon ground cinnamon 

Cacao nibs, for garnish 

Directions

  1. Make the Red Eye ice cubes: The night before, combine the coffee with the espresso (a Red Eye). Let cool then pour into an ice cube tray. Freeze overnight.
  2. Prepare the smoothie: Combine the chia seeds with 1/2 cup of the plant-based milk in a small bowl and leave in the fridge to plump overnight. This will replace the usual frozen banana. 
  3. In the morning, blend the Red Eye ice cubes, soaked chia seed mixture, cacao powder, cinnamon and the remaining 1/2 cup milk in a blender until thick and smooth. Pour into 2 glasses and top with cacao nibs for crunch!
