Ingredients

Cherries:

Coconut oil, for greasing ramekins

3 cups fresh cherries, pitted and halved 

2 tablespoons spelt flour 

2 tablespoons pure maple syrup 

1 tablespoon freshly squeezed lemon juice 

1 teaspoon pure vanilla extract 

Oat Topping:

1 cup rolled oats

1/2 cup raw walnuts, chopped  

1/3 cup unsweetened shredded coconut  

1/2 teaspoon ground cinnamon 

1/4 teaspoon sea salt 

2 tablespoons pure maple syrup 

1 1/2 tablespoons coconut oil, melted 

Directions

  1. Preheat the oven to 350 degrees F.
  2. For the cherries: Grease 2 to 4 ramekins with coconut oil and then set aside. 
  3. Place the cherries in a large mixing bowl, followed by the flour, maple syrup, lemon juice, and vanilla extract. Stir to combine and then pour into the prepared ramekins, filling each about 2/3 full. 
  4. For the topping: Combine the oats, walnuts, shredded coconut, cinnamon, and sea salt in a separate bowl. Add the maple syrup and coconut oil, then stir to combine until evenly mixed. 
  5. Sprinkle the oat topping over the cherries in the ramekins. 
  6. Bake until hot and bubbly, about 20 to 25 minutes.
