Healthy 7-Layer Dip

Layers of beans, avocado and Greek yogurt make this a healthier option for party dip. Serve it with veggies or baked tortilla chips.

Ingredients

Two 15-ounce cans no-salt added pinto beans, drained and rinsed

2 large tomatoes, diced 

1/4 cup chopped fresh cilantro 

1 teaspoon ground cumin 

1 teaspoon chili powder 

1/2 teaspoon garlic powder 

Sea salt 

3 medium avocados, pitted and diced 

1 1/2 tablespoons freshly squeezed lime juice 

1 1/2 cups plain Greek yogurt 

One 4.25-ounce can pitted black olives, sliced 

3/4 cup shredded Cheddar 

3/4 cup shredded Monterey jack cheese 

2 cups finely shredded iceberg lettuce 

4 green onions, sliced 

Baked tortilla chips, for serving 

Directions

  1. Mash the pinto beans in a medium bowl until smooth. Add 1/4 cup of the diced tomato, the cilantro, cumin, chili powder, garlic powder and 1/2 teaspoon salt stirring to combine.
  2. Mash the avocados and lime juice together in a separate bowl.  
  3. To assemble, spread the bean mixture in the bottom of a large rimmed baking dish. 
  4. Follow by layering the following ingredients in order: avocado mash, yogurt, remaining diced tomatoes, lettuce, cheeses, olives and green onions. 
  5. Serve the dip with baked tortilla chips.
