Healthy Meal Prep with Cashew Chicken

When you plan ahead, it's easier to eat healthy, especially when it's cashew chicken! Who knew cashews could elevate chicken?

2 tablespoons olive oil

2 cups broccoli florets 

1/2 cup chopped white onion 

1/2 teaspoon sesame oil, plus more as needed 

4 cloves garlic, minced  

1/2 cup rice wine 

Kosher salt 

1/3 cup roasted cashews, chopped 

150 grams sliced chicken breast (about 1 cup) 

150 grams sliced chicken thighs (about 1 cup) 

3 tablespoons soy sauce 

1 lemon, juiced 

1 teaspoon chili flakes 

1 1/2 cups cooked red rice 


  1. Heat up 1 tablespoon of the olive oil in a wok over medium-high heat. Fry off the broccoli for 3 minutes. Add in the onions, sesame oil and half the garlic. Cook for 5 minutes on medium heat. Add 1/4 cup of the rice wine and cook for an additional 3 minutes. Season with salt.
  2. Heat up the remaining 1 tablespoon olive oil in another pan on medium heat. Add the cashews and cook for 2 minutes. Fry off the chicken until half cooked. Add the soy sauce, lemon juice, the remaining 1/4 cup rice wine and a drop of sesame oil. Keep on the heat until cooked through. Finish with salt to taste.  
  3. Portion the rice, chicken and vegetables equally in your plastic storage containers.
