Ingredients

Crust:

2/3 cup coconut flour

2 tablespoons pure maple syrup 

1/4 cup coconut oil, melted 

2 tablespoons full-fat coconut milk 

Caramel:

1 1/2 cups dates, pitted

1/3 cup coconut oil 

1 tablespoon unsweetened almond milk 

1 tablespoon blackstrap molasses 

1 teaspoon pure vanilla extract 

1/8 teaspoon sea salt 

Chocolate Layer:

1 cup dark chocolate chips

2 tablespoons coconut oil 

2 tablespoons pure maple syrup 

Directions

  1. For the crust: Combine the coconut flour, maple syrup, coconut oil and coconut milk in a medium bowl. Press this mixture into a 9-by-5-inch loaf pan lined with parchment paper.
  2. For the caramel: Add the dates, coconut oil, almond milk, molasses, vanilla and salt to a food processor. Process until smooth. Pour the caramel over the crust and put into the freezer for 10 minutes. 
  3. For the chocolate layer: Melt the chocolate chips, coconut oil and maple syrup in a saucepan over medium heat until melted and smooth. Pour the chocolate over the caramel layer. Freeze for until solid, 30 to 40 minutes. 
  4. Slice into bars and serve.
