Jumbo Stuffed Shiitake Mushrooms

Ingredients

2 jumbo shiitake mushrooms

Flour

7 ounces (200 grams) ground pork

1/4 onion, finely chopped

1 egg

1 clove garlic, finely chopped

1/2 teaspoon salt

1/2 teaspoon pepper

Vegetable oil

3 tablespoons soy sauce

2 tablespoons mirin

1 tablespoon sake

2 tablespoons sugar

2 chile peppers

Sliced scallions

White sesame seeds

1 egg yolk, optional 

Directions

  1. Cut off the stems from the shiitake mushrooms and finely chop the stems. Sprinkle the shiitake mushroom caps with flour.
  2. Combine the chopped stems, pork, onions, egg, garlic, salt and pepper in a bowl and mix well. 
  3. Stuff the mushroom caps with the pork mixture.  
  4. Heat some oil in a skillet over medium heat and place stuffed shiitake mushrooms in the skillet meat side down. Cover and cook for 5 minutes. Flip the mushrooms and cook covered for another 5 minutes. Add the soy sauce, mirin, sake, sugar and chile pepper right into the skillet and cook until the sauce has thickened.  
  5. Transfer stuffed mushrooms and sauce to a plate and sprinkle on scallions and sesame seeds. Dip into egg yolk if desired.
