Little Caramel Apples

Ingredients

Caramel:

2 cups pitted dates, soaked in water overnight

1/3 cup coconut oil 

2 tablespoons fresh lemon juice 

1/2 teaspoon kosher salt 

1 teaspoon pure vanilla extract 

Apples:

10 mini apples, washed and dried well

10 candy sticks 

1/3 cup cacao nibs 

1/3 cup pecans, toasted and chopped 

Directions

  1. For the caramel: Combine the dates, coconut oil, lemon juice, salt and vanilla in a blender and pulse until smooth.
  2. For the apples: Line a baking sheet with parchment paper. Insert a candy stick firmly into the top of each apple. Dip the apples in the caramel sauce and set on the prepared baking sheet or dip the caramel apples in cacao nibs or toasted pecans, to taste.
