Nearly Guilt-Free Cookies

Feel good about wholesome ingredients like peanut butter and old-fashioned oats while savoring the chocolate and peanut butter chips.

1 cup creamy peanut butter

2 tablespoons honey 

4 tablespoons light brown sugar 

1/2 cup plus 2 tablespoons old-fashioned oats 

1/8 teaspoon salt 

1 teaspoon baking soda 

1/2 teaspoon pure vanilla extract 

1 large egg, beaten 

1/4 cup peanut butter chips 

1/4 cup chocolate chips


  1. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  2. Stir together the peanut butter, honey and brown sugar in a large bowl until completely combined. Add the oats, salt, baking soda, and vanilla. Mix well. 
  3. Add the egg to the mixture and mix well. Stir in the peanut butter chips and chocolate chips. 
  4. Using your hands, scoop out dough and press very tightly to form small balls (you should have about 15). Place the dough balls on the prepared baking sheet and lightly press down to flatten slightly. Bake the cookies until the bottoms just start to turn brown, 7 to 9 minutes. Remove to a wire rack and let cool completely before enjoying.
