Simple Almond Joy Energy Bites

Made with chia seeds and nuts, these chocolatey snacks are both nutritious and delicious. Perfect for keeping your energy level in-check throughout the day.

1 1/2 cups dates, pitted (about 8 ounces)

1/2 cup rolled oats 

1 cup raw almonds 

1 tablespoon coconut oil 

2 tablespoons chia seeds 

2 tablespoons ground flaxseeds 

3 tablespoons unsweetened cocoa powder  

1/2 cup unsweetened shredded coconut, plus more for sprinkling 

Pinch of sea salt 

1 teaspoon almond extract 

32 whole toasted almonds 

Melted chocolate, for garnish (optional) 


  1. Line a baking sheet with parchment or wax paper.
  2. Place the dates in a food processor and pulse until fine. Add the oats, raw almonds, coconut oil, chia seeds, ground flaxseeds, cocoa powder, the 1/2 cup shredded coconut, salt and almond extract. Pulse again until the mixture comes together and forms a ball. 
  3. Scoop into tablespoon-sized balls, stuff 1 toasted almond in each ball and roll to enclose. 
  4. Garnish with a gorgeous drizzle of melted chocolate, and sprinkle with more shredded coconut.  
  5. Simply place in an airtight container in the refrigerator for up to 2 weeks!
