Ingredients

2 bone-in chicken breast halves, skin on

2 tablespoons olive oil

4 carrots, chopped

4 stalks celery, chopped

1 yellow onion, chopped

2 cloves garlic, chopped

10 cups water

1 1/2 cups brown rice

Kosher salt and freshly ground black pepper

1/4 cup chopped fresh dill

1 lemon, halved

Directions

  1. Preheat the broiler. Line a sheet pan with foil. Put the chicken breasts on the foil. Broil until the skin is browned, 7 to 9 minutes. Set aside.
  2. Heat a large Dutch oven over medium heat. Add the olive oil. Once glistening, add the carrots, celery and onion. Cook for about 3 minutes, stirring occasionally. Add the garlic and cook for about 30 seconds. Add the water and browned chicken. Lower to a simmer and cook, covered, for 30 minutes.
  3. Stir in the brown rice. Cover and simmer until the rice is tender, about 30 minutes. Season with salt and pepper to taste. To serve, garnish with fresh dill and a squeeze of lemon.
