Strawberry Coconut Cream Popsicles

This is a berry sweet way to cool off with two of our favorite ingredients: strawberry and coconut.

Ingredients

3 cups sliced fresh strawberries (about 1 1/2 pounds)

One 13 1/2-ounce can full-fat coconut milk

1/4 cup raw honey

1/4 teaspoon pure vanilla extract

Directions

Special equipment:
a popsicle mold 
  1. Combine the strawberries, coconut milk, honey and vanilla extract in a blender or food processor. Process until smooth. Pour evenly into a popsicle mold.
  2. Freeze for about 1 hour, then insert popsicle sticks and then freeze overnight or 6 to 8 hours.  
  3. Let the popsicles stand at room temperature for 5 minutes, then unmold.
