Upside-Down Glazed Carrot Tart

1 pound baby carrots or young (thin) carrots, peeled and halved

2 tablespoons butter

2 tablespoons honey

1/2 tablespoon apple cider vinegar

1 teaspoon thyme leaves, finely chopped

Salt and freshly ground black pepper  

1/4 cup goat cheese

1 frozen puff pastry sheet, thawed


  1. Preheat the oven to 400 degrees F. Cook the carrots in a pot of boiling salted water until bright orange and slightly tender, 4 to 5 minutes.
  2. Meanwhile, combine the butter, honey, vinegar, thyme and salt and pepper to taste in a large cast-iron skillet over medium heat. When the carrots are ready, drain them and add them to the skillet. Toss to coat in the syrup. Cook just until a glaze forms.
  3. Take the skillet off the heat, arrange the carrots in a single layer over the bottom, and crumble the goat cheese on top. Measure and cut the puff pastry to fit inside the skillet. Tuck the pastry over the carrots and cheese. Bake until golden, 25 to 30 minutes. 
  4. Remove from the oven and let cool for about 10 minutes. Run a knife along the edges to loosen the tart, then invert it onto a plate and remove the skillet. Slice and serve!
