Watercress and Pixie Tangerine Salad

Ingredients

Salad:

2 bunches watercress, chopped

2 oranges, peeled and sliced

1 avocado, peeled and sliced

1 bunch fresh mint leaves, chopped

1 bunch fresh basil leaves, chopped

Dressing:

1/4 cup olive oil

2 tablespoons orange juice

1 tablespoon lemon juice

1 to 2 small shallots, minced

Kosher salt and freshly ground black pepper

Directions

  1. For the salad: Combine the watercress, oranges, avocado, mint and basil in a bowl.
  2. For the dressing: Mix the olive oil, orange juice, lemon juice, shallots and salt and pepper to taste in a jar and shake until combined, 1 minute.
  3. Dress the salad and serve immediately.
