Watermelon Gazpacho

Ingredients

1 cup cubed seedless watermelon

1/2 cup chopped tomato 

1/3 cup chopped orange bell pepper 

1/4 cup chopped red onion 

1 jalapeño, chopped 

1/3 cup chopped cucumber 

2 tablespoons fresh lime juice 

Salt and pepper, to taste 

Olive oil, for serving 

Directions

  1. Blend all of the ingredients except the olive oil in a blender until smooth. Serve chilled or at room temperature with a drizzle of olive oil on top.
