Wheat Berry Burgers

Serve these tasty veggie burgers on whole grain rolls with your favorite fixings or tucked into lettuce cups topped with tzatziki.

Makes 6
Ingredients:
Olive oil
½ small onion, chopped
Kosher salt and black pepper
2 cup cooked wheat berries, cooled
4 peppadew peppers
2 tablespoons prepared hummus
1 large egg
Directions:

Heat 1 teaspoon of oil in a small skillet. Add onion, season with a pinch of salt and sauté until translucent, about 4 minutes; set aside to cool. Combine cooked onion, wheat berries, peppadew peppers, hummus, and egg in a food processor fitted with a steel blade. Season with ¼ teaspoon each kosher salt and black pepper. Pulse until mixture is well combined, stopping to scrape down the sides of the bowl a couple of times. Form mixture into 6 equal-sized patties (about ½ cup each). Heat 2 teaspoons of oil in a large skillet, place 2 burgers in the skillet and cook for 5 minutes per side; transfer to a plate. Repeat for remaining burgers.
