The day I found out I was allergic to watermelon was a very confusing day. I mean, it’s just water; what’s there to be allergic to?? My doctor informed me that the fruit is, in fact, more than just water and, if I wanted to avoid an itchy and scratchy show in my throat, I should stop eating it. The thought was preposterous — a life without watermelon? Um, no, thank you! And so, I sacrificed comfort (okay, my allergy isn’t that bad...) to sink my teeth into the sweet, crisp fruit. This was my Everest and I was determined to conquer it, no matter the cost.

As my story shows, kicking back and enjoying a cool piece of watermelon is an integral part of summer. Whether you prefer to eat it by the slice or like to incorporate it into some of your favorite summertime dishes, the following recipes will help you gather inspiration and get into the watermelon groove!

Tomato and Watermelon Salad (pictured above)

Tomatoes and watermelon — who would have thought that two things so different were meant to be together?! If you don’t believe us, just try this refreshing salad. You’ll use fresh tarragon to add in a licorice-like bite and hulled strawberries for a bit more sweetness. All that’s left to do is kick your feet up and enjoy (with a cocktail in your hand, of course!)

No one ever said that salsa had to be savory! Switch it up and create this sweet watermelon-filled version, instead. Chucks of watermelon and mango add a crisp sweetness while jalapeno and basil give it a touch of heat.

Celebrate taco Tuesday (or any other day of the week for that matter) with these zesty tacos. To create the mouthwatering filling, you’ll combine tomatillos, red onion and jalapenos with shredded rotisserie chicken. You’ll then toss in cilantro, avocado, lime and watermelon. It’s the perfect summertime dish for someone looking to use fresh and bright ingredients...or has a leftover chicken in the fridge!

A little bit sweet, a little bit savory, this Jicama and Watermelon Salad is just what you need to rehydrate after sitting on the beach all day. To bring out the natural sweetness of both fruits, create a luscious dressing by whisking together orange and lime zest, honey, pepper and a dash of salt. Top with a bit of mint and dig right in!

For a quick grab-and-go appetizer at your next summer party, prepare these flavorful skewers. Sweet and juicy, crisp and fresh, these skewers highlight the beauty of fresh summer produce, so be sure to take advantage of it before the season is over.

Nothing highlights the freshness of watermelon better than this delicious Asian Watermelon Salad. Overflowing with crunchy peanuts and aromatic herbs like basil, mint and cilantro, it’s the perfect side to accompany all your weeknight chicken, steak or veggie dinners.
