The day I found out I was allergic to watermelon was a very confusing day. I mean, it’s just water; what’s there to be allergic to?? My doctor informed me that the fruit is, in fact, more than just water and, if I wanted to avoid an itchy and scratchy show in my throat, I should stop eating it. The thought was preposterous — a life without watermelon? Um, no, thank you! And so, I sacrificed comfort (okay, my allergy isn’t that bad...) to sink my teeth into the sweet, crisp fruit. This was my Everest and I was determined to conquer it, no matter the cost.

As my story shows, kicking back and enjoying a cool piece of watermelon is an integral part of summer. Whether you prefer to eat it by the slice or like to incorporate it into some of your favorite summertime dishes, the following recipes will help you gather inspiration and get into the watermelon groove!

Tomato and Watermelon Salad (pictured above)

Tomatoes and watermelon — who would have thought that two things so different were meant to be together?! If you don’t believe us, just try this refreshing salad. You’ll use fresh tarragon to add in a licorice-like bite and hulled strawberries for a bit more sweetness.
