221 Meat Loaf

Ingredients

3 1/2 pounds hamburger

2 eggs

1 cup oatmeal

1 small onion, diced

1 small green pepper, diced

1/2 cup ketchup

1 1/2 cups beef broth

1 tablespoon salt

1 tablespoon black pepper

1 tablespoon garlic powder

1 tablespoon onion powder

Directions

  1. Preheat the oven to 350 degrees F.
  2. Mix all ingredients well. Place in a loaf pan and bake for 1 1/2 hours.

I had never substituted oatmeal for breadcrumbs before and I was a little bit worried about how that might change the taste. The oatmeal actually improved the texture and taste of the meatloaf. The whole family enjoyed this new, healthier version of meatloaf a lot!<br /><br /><br />
