Do not use this mix to make yeasted dough, such as for bread or pizza. You want an all-purpose gluten-free flour mix for that kind of dough.
400 grams white rice flour
300 grams tapioca flour
150 grams cornstarch
100 grams millet
50 grams milk powder
Pour all the flours and milk powder into a large container. (Restaurant supply stores sell large plastic containers that fit this purpose well. You could also use a large glass jar.) Shake and shake and shake harder until all the flours have become one color.
That's your pastry flour mix.
Whenever you want to bake, reach for that container and measure out the grams you will need for your recipe.

This mix is a template for the flour mix you can make in your own home. If you cannot eat or find millet or one of the starches above, choose from those in the list below. You can make your own flour mix with the flours you can afford and can eat.
Also, milk powder lends a bit of protein to the mix and creates more tenderness in the final dough. But if you cannot eat dairy, try a nondairy milk powder — or, simply use 50 grams more of one of the starches.
