Some baked goods require a lighter touch, and thus more white starches, to create a delicate, flaky crust. When you want a tender dough for pies, doughnuts, cakes or dainty cookies, try this gluten-free pastry flour mix.

Do not use this mix to make yeasted dough, such as for bread or pizza. You want an all-purpose gluten-free flour mix for that kind of dough.

400 grams white rice flour
300 grams tapioca flour
150 grams cornstarch
100 grams millet
50 grams milk powder

Pour all the flours and milk powder into a large container. (Restaurant supply stores sell large plastic containers that fit this purpose well. You could also use a large glass jar.) Shake and shake and shake harder until all the flours have become one color.

That's your pastry flour mix.

Whenever you want to bake, reach for that container and measure out the grams you will need for your recipe.

How to Make the Best Gluten-Free Pastry Flour Mix for Your Kitchen
This mix is a template for the flour mix you can make in your own home. If you cannot eat or find millet or one of the starches above, choose from those in the list below. You can make your own flour mix with the flours you can afford and can eat.

Also, milk powder lends a bit of protein to the mix and creates more tenderness in the final dough. But if you cannot eat dairy, try a nondairy milk powder — or, simply use 50 grams more of one of the starches.

Here are some of the gluten-free flours available to you, broken down by categories. Very important: Make sure you buy these only from a company that is certified gluten-free.

Brown rice flour
Corn flour
Mesquite flour
Oat flour (make certain it is certified gluten-free flour) 
Sorghum flour
Teff flour

Arrowroot flour
Potato starch
Sweet rice flour
Tapioca flour
White rice flour

How to Use This Gluten-Free Pastry Flour Mix in Your Other Favorite Recipes
You can also use this flour mix for any of your favorite recipes that use all-purpose bleached white wheat flour. Simply use 140 grams of this mix for every 1 cup of all-purpose bleached white wheat flour called for.
