You'll need the following ingredients to make Lemon Pepper Cured Chicken with Fennel Salad, Espresso Steak with Baked Zucchini and Potatoes and Eggplant Schnitzel and Roasted Peppers.

2 pounds flank steak

3 large field or red bell peppers

2 zucchini

1 bundle arugula

1 large firm eggplant

1 bulb fennel

1 bunch parsley

1 bunch rosemary

1 bunch thyme

3 medium russet potatoes

2 onions

1 bunch celery

1 head garlic

1 shallot

4 lemons

1 wedge (8 ounces) Parmigiano-Reggiano

1 1/2 cups breadcrumbs

Small jar capers

One 28- to 32- ounce can stewed tomatoes or Italian San Marzano tomatoes

 

Pantry List:

Dijon mustard

White wine or cider vinegar

Aged balsamic vinegar

Olive oil

Frying oil, such as canola or vegetable oil

Worcestershire sauce

Honey

Espresso or coffee

Light brown sugar

Ground cinnamon

Espelette or cayenne pepper

Fennel seeds, optional

Granulated garlic

Whole nutmeg

Granulated onion

Salt and pepper
