Basic Vinaigrette

2-3 teaspoons Dijon mustard

salt & pepper, to taste

1/4 cup red wine vinegar

3/4 cup extra virgin olive oil


  1. In a bowl whisk together mustard, salt, pepper, and red wine vinegar. Add olive oil in a stream to vinegar mixture and whisk until mixture emulsifies. Taste and adjust seasoning with salt & pepper.
