I made these with my 4 yr old granddaughter.  She had a good time getting the chocolate all over her little hands.  I used semi sweet and If your chocolate seizes it's because of moisture getting into it.  For the question about how much butter?  Are you afraid to experiment,?  You can just drop in by small amts.and stir.  Go by trial and error method, it's only a little fun project if you do mess it up.
