Flourless Peanut Butter Cookies

1 cup natural peanut butter

 1 cup sugar

 1 teaspoon pure vanilla extract

 1 large egg, lightly beaten

 Coarse sea salt, for sprinkling


  1. Preheat the oven to 350 degrees F and place the racks in the upper and lower third of the oven.
  2.  In a medium bowl, mix the peanut butter, sugar, vanilla and egg until well combined. Spoon 1 tablespoon of the mixture about 1 inch apart onto ungreased baking sheets. Flatten the mounds with the tines of a fork, making a crosshatch pattern on the cookies. Sprinkle coarse salt on top of the cookies.
  3.  Bake until golden around the edges, about 10 minutes, switching the position of the sheets halfway through baking. Transfer to racks to cool. Repeat with the remaining dough.

Thank you to all the reviewers who made suggestions to improve this awesome recipe.  I have made them twice and they are a big hit.  Delicious.  Lighter than regular peanut butter cookies and the salt provides a zest.  Here is how I adapted the recipe:<br />1 1/4Cup peanut butter (I used Teddie brand, which is not too dry.  Thus, I did not need to add oil.  I also used creamy and crunchy styles and both were good.)  3/4 cup brown sugar packed tightly;  1 tsp vanilla;  2 large eggs; 1/4 tsp baking soda; 1/4 tsp baking powder  (These 2 ingredients help the cookie be light and not dense.)  1/4 cup chopped dark chocolate (Gave the cookie a unique flavor.)<br />I mixed all ingredients in the mixer until well combined, which didn't take long.  I did have to bake them 16 minutes as another reviewer mentioned.  I also did turn the cookie sheets halfway through the baking time.<br />Enjoy!<br />
