Ingredients

1 tablespoon Dijon mustard

3 tablespoons cider vinegar

1/3 cup canola oil

1/2 head red cabbage, shredded

1 large carrot, peeled and shredded

1 bell pepper, sliced

Salt and pepper

Directions

  1. In large bowl, whisk together the Dijon, cider vinegar, and canola oil. Add cabbage, carrot, and bell peppers and stir to combine. Season with salt and pepper, to taste.
