Family Style: Meatloaf

Ingredients

2 cups fresh bread crumbs

3/4 cup minced onion

1/4 cup minced green pepper

1/2 cup sliced mushrooms

2 eggs, beaten

1 pound ground chuck

1/2 pound ground veal

1/2 pound ground pork shoulder

2 tablespoons grated horseradish

2 1/2 teaspoons salt

1 teaspoon dry mustard

1/4 cup milk

3/4 cup ketchup

2-3 slices bacon

Directions

  1. In a large bowl combine well all ingredients except 1/2 cup ketchup. Grease baking loaf pan. Add mixture to pan taking care not to overwork. Cover with slices of bacon and brush with remaining ketchup. Bake at 400 degrees for 50 minutes. Cool for 10 minutes and slice. Makes great sandwiches the next day.
