1 pound fresh mozzarella, half cut into 1/2-inch cubes and half thinly sliced

Freshly ground black pepper and crushed red pepper or to taste

Quick Marinara Sauce:

2 tablespoons extra-virgin olive oil

1/4 medium onion, chopped

3 cloves garlic, chopped

Reduce heat to low, cover, and simmer for 10 minutes. Remove and discard herb sprigs, stir in 2 teaspoons salt, and season with pepper to taste. Store refrigerated for up to 3 days or freeze for up to 2 months.
