Beef Meatballs

Ingredients

Cooking spray

2 pounds ground beef

1/2 cup breadcrumbs

1/2 cup milk

2 large eggs, lightly beaten

1/2 small onion, grated 

1 clove garlic, finely grated 

1/3 cup chopped fresh parsley

Kosher salt and freshly ground pepper

Directions

  1. Preheat the oven to 450 degrees F. Line 2 baking sheets with foil and coat with cooking spray.
  2. Combine the beef, breadcrumbs, milk, eggs, onion, garlic, parsley, 2 teaspoons salt and 1/2 teaspoon pepper in a large bowl; mix with your hands until combined. Form into 1 1/2-inch meatballs (about 30). Arrange the meatballs on the prepared baking sheets. 
  3. Bake the meatballs until browned and cooked through, 12 to 15 minutes.

Love these meatballs!!! So moist! I changed up the recipe by adding a 10oz jar of jalapeno jelly, doubled the breadcrumbs, and used 2 tsp of jarred minced garlic. I used Italian seasoning breadcrumbs, and I will up the amount of garlic next time. This is definitely my go to meatball recipe.
