To check if the oil is hot enough, add a cube of bread; if it sizzles and turns golden quickly, you're ready to fry.

Add fish pieces one at a time. Be sure to leave space between each; crowding the pan will make the fish soggy.

Keep the pieces from touching as they cook, and turn as needed so they'll be golden on all sides.

Drain the fish well, but don't let the pieces sit for too long on the greasy paper towels.
