Use a melon baller to scoop balls from cantaloupe, watermelon and honeydew halves and place in a large bowl. Add the Fresh Mozzarella and mint leaves.

In a separate bowl, whisk together olive oil, honey and white balsamic vinegar and season with kosher salt. Add to melon and cheese, toss to coat. Garnish with mint leaves.
