Ingredients

4 medium apples such as Gala, Empire, or Granny Smith

1 lemon

4 tablespoons granulated sugar

3 tablespoons unsalted butter, softened

4 tablespoons firmly packed brown sugar

2 teaspoons ground ginger

4 tablespoons finely chopped pecans

4 tablespoons chopped raisins

Directions

  1. In a bowl stir together the butter, the brown sugar, the ginger, the pecans, and the raisins. Core the apples, peel the top third. Rub the peeled flesh with lemon and dip into granulated sugar.
  2. Spoon the ginger mixture into the apple cavities, mounding it. Arrange apples in a baking dish just large enough to hold them.
  3. Bake apples in the middle of a preheated 375 degree oven, basting with accumulated syrup once or twice, for 35 to 40 minutes, or until they are tender.
  4. Baste the apples with syrup, transfer to a platter with a slotted spoon. Reserve syrup to serve on the side.
