Grilled Salmon with Mango Salsa

4 (6 oz. each) salmon fillets

Salt (to taste)

Pepper (to taste)

Mango Salsa:

2 fresh mangoes or 1 (15 oz.) can mangoes in syrup drained

1/4 cup red bell pepper (fresh or frozen), diced

1/4 cup red onion, diced

1/4 cup fresh cilantro, chopped

1/4 cup fresh lime juice


  1. Season salmon with salt and pepper. 
  2. Mix well and let stand. 
  3. Heat lightly oiled grill pan on medium-high heat. Grill seasoned salmon for 5 minutes on each side or until done. 
  4. Top with salsa and serve. 
  5. Serve with baked sweet potato wedges.

Cook’s Note

Tip: Checking salmon for doneness: Gently insert a fork tip into the thickest part of the fish. If the salmon easily separates (or flakes), it's ready. Variation: Make the same recipe with grilled chicken.
