Preheat oven to 425F.
In a large bowl, mix 2 tablespoons lemon juice, oil, salt, mustard seeds, nutmeg and vanilla. Add carrots and toss.
Transfer to foil-lined baking sheet. Roast 20 minutes and remove from oven.
Mix honey, lemon zest and turmeric. Shortly before serving, drizzle honey over carrots. Return to oven for 6-8 minutes to glaze.
Serve hot or warm.
