Roasted Tomatoes

12 plum tomatoes, halved lengthwise, cores and seeds removed

4 tablespoons good olive oil

1 1/2 tablespoons balsamic vinegar

2 large garlic cloves, minced

2 teaspoons sugar

1 1/2 teaspoons kosher salt

1/2 teaspoon freshly ground black pepper


  1. Preheat the oven to 450 degrees F.
  2. Arrange the tomatoes on a sheet pan, cut sides up, in a single layer. Drizzle with olive oil and balsamic vinegar. Sprinkle the garlic, sugar, salt, and pepper over the tomatoes. Roast for 25 to 30 minutes, until the tomatoes are concentrated and beginning to caramelize. Serve warm or at room temperature.

I have made these tomato’s for many years! Even when my children were babies, they thought these were a kind of dessert! I have used them every way possible and have yet to find a dish that they didn’t make better! (Try them in risotto!) I have a tip for you cooks that adore these and make several pans at once. .In a clean jar, after the tomato’s have cooled and dried out a bit ,add a very good extra virgin olive oil (the kind for eating, a better quality than one to cook with) pour about 4 or 5 oz. in jar. Chop up leftover tomato’s , and add to oil, (making sure the oil covers the tomatoes) These will last FOREVER, and you can use them at your leisure!
