Sui Choy Slaw Dressing:


Grate 5 to 6 carrots into a large salad bowl. Slice 1 head of sui choy, and add to the bowl. Toss the carrot and sui choy with the sui choy slaw dressing, and add salt and pepper, to taste. Lay the slaw over a bed of snow pea shoots and mesclun greens.

Sui Choy Slaw Dressing:

Whisk together all ingredients in a small bowl. 

Yield: about 1 cup
