Zucchini Waffles

  1. Preheat a waffle iron.
  2. Combine the zucchini, pancake mix, milk, oil, cinnamon, vanilla and egg in a large bowl and mix to combine.
  3. Spray the waffle iron with cooking spray. Add the batter to the waffle iron. Cook the waffles until brown and cooked through, about 2 1/2 minutes.
