Manhattan Clam Chowder

Ingredients

4 slices bacon, 1/2-inch pieces

1 onion, chopped

3 carrots, sliced

3 stalks celery, sliced

1 bay leaf

1 teaspoon red pepper flakes, crushed

1 teaspoon tarragon

1 large can peeled tomatoes, quartered

4 cups canned clam juice

3 potatoes, peeled and cubed

Fresh parsley, chopped

2 cans clams, chopped

Directions

  1. In heavy kettle cook bacon over a medium heat until fat is released. Add onion and saute until soft. Add carrots and celery and stir to coat. Add bay leaf, red pepper flakes and tarragon. Cook vegetables and seasonings until tender. Add tomatoes and clam juice. Bring to a simmer. Add potatoes and simmer until tender, about 20 minutes. Add parsley and clams. Simmer for 10 minutes more and serve.

Simple and robust. My husband typically said he doesn’t even like restaurants but he said he will try mine since my cooking is better than most he said. My stepson said it’s his new favorite and my 10 year old twins who are picky eaters loved it! The kettle is really the key to making this soup great. I added some shrimp and water so it wasn’t too salty. Literally a one pot meal!!! It was sooo good. Thank you!!!
