Trim, wash, dry, and break up the chicories. Just before serving, dress the greens with the apple-thyme dressing. Serve 1 large handful per plate.
Combine all ingredients in a small saucepan, and boil until juices are slightly thickened and apples are soft but not broken down, 3 to 5 minutes. Store dressing, tightly covered, in the refrigerator for up to 3 days. Yield: 3/4 cup
