8 plum tomatoes, seeded, and cut into 1/4-inch dice

1/4 cup finely diced onion

1 jalapeno pepper, stemmed, seeded, and finely diced

1 clove garlic, finely diced

1/4 cup roughly chopped fresh cilantro leaves

3 tablespoons fresh lime juice

Coarse salt and freshly ground pepper


  1. In a medium bowl toss together all the ingredients until combined. Serve immediately or cover and let stand for 30 minutes to allow the flavors to infuse.
