Winning Recipe: Pretzel-Crusted Pickle Chips with Mustard Sauce
Pickles are much more than just a sandwich accessory -- or so we learned from our March 2010 recipe contest. Danica Preston of San Antonio turned her favorite childhood snack, crisp dill pickles right out of the jar, into a grown-up party food: pickle chips. She coated thick slices in crushed pretzels and fried them for extra crunch. Even Danica’s anti-pickle boyfriend found the salty chips and smoky dipping sauce addictive. "They’d be the best bar snack," she says.

Summer Fest: A Day of Potato Recipes
Potatoes definitely weren't my favorite veggie as a kid. Give me a pile of mashed potatoes, and I was just in it for the gravy. I turned my nose up at baked potatoes, and forget about French fries. Now that I'm older (and a little wiser) I see what all the fuss is about: Besides being delicious, versatile and cheap, potatoes are packed with nutrients and fiber. Sure, they're good fried and mashed, but spuds have more to offer. Here's how to eat potatoes for breakfast, lunch and dinner.

In this sushi recipe, the raw fish is switched with a variety of vitamin-packed veggies -- radishes, carrots, scallions, peppers and some avocado. Don’t forget about nori (sushi's green wrapper). This traditional Japanese sea vegetable is high in fiber, potassium and vitamins A and C (both antioxidants).
