Ingredients

1 quart yogurt, strained

1/4 cup chopped onion

1/4 cup chopped mint

1 lemon, juiced

1 tablespoon olive oil

Salt and freshly ground black pepper

Directions

  1. In a large bowl, combine all of the ingredients. Season with the salt and pepper, to taste.

I love raita, and this is just how i remember it at my favorite indian place -- not sweet, but clean and refreshing. It goes well on so many things, from fresh grilled salmon to tandoori chicken or even over a fresh vegetable salad. Not to mention, this recipe is so easy!
