Roasted Parmesan Potatoes

Ingredients

4 tablespoons salted butter, melted

1 tablespoon olive oil 

1 teaspoon garlic powder 

1 teaspoon onion powder 

1 teaspoon smoked paprika 

1/2 teaspoon flaky sea salt 

Freshly ground black pepper 

4 tablespoons grated Parmesan cheese 

2 pounds russet potatoes, cut in 1/4-inch slices

Nonstick cooking spray, for the baking sheets

1/4 cup chopped fresh parsley 

Directions

  1. Preheat the oven to 450 degrees F.
  2. To a large bowl, add the melted butter, olive oil, garlic powder, onion powder, smoked paprika, salt, some black pepper and 3 tablespoons of the Parmesan, then mix together. Add the potato slices and toss to coat.
  3. Coat 2 large baking sheets with cooking spray. Spread the potato slices in one layer on the prepared baking sheets. Sprinkle the potatoes with the remaining 1 tablespoon Parmesan and bake until the potatoes are tender, crisp and golden, 15 to 20 minutes. Transfer them to a serving dish and sprinkle with the parsley.

In love with these potatoes! Instead of parsley, I had fresh basil & oregano from my garden. I cut & sprinkled that on the potatoes with the parm cheese before baking. Yum! Oh, & I used red potatoes as well.
