Refreshing Bulgur Salad

With many variations throughout the Middle East, simple ingredients like mint, parsley and cucumber come together with bulgur to make a refreshing grain salad.

Ingredients

1 cup cracked bulgur wheat

1 tomato, seeded and diced

1 cucumber, seeded and diced

1 onion, diced

1 clove garlic, minced

1 lemon, juiced

1 tablespoon red wine vinegar

3 tablespoons olive oil

2 teaspoons fresh mint, chopped

2 teaspoons fresh parsley,chopped

Pepper

Directions

  1. Prepare bulgur wheat according to package directions or, in a large bowl pour 1 cup boiling water over bulgar wheat. Cover with plastic wrap and let sit for one hour. In separate bowl combine tomatoes, cucumber, onion and garlic. Add the juice of one lemon. Add vinegar and oil. Toss to coat. Add mint and parsley. Season with salt and pepper to taste. Chill for at least one hour before serving.

I loved this recipe. The only alteration I made was to saute the onion and garlic - since I'm not a fan of raw onion. Was even better the next day!
