Ricotta Cake

Ingredients

For the dough:

2 eggs

2 cups flour

1 teaspoon baking powder

Pinch salt

1/4 cup water

For the filling:

1 pound ricotta

1/4 cup cooked rice

6 eggs

Pinch salt

1/2 cup sugar

1 teaspoon vanilla extract

Cake decorations

Directions

  1. To prepare dough: combine all ingredients in mixing bowl. Knead dough and roll with rolling pin to form thin layer. 
  2. To prepare filling: Preheat oven to 300 degrees. In a large bowl, combine ricotta, cooked rice, eggs, salt, sugar, and vanilla extract. Line ovenproof dish, or pie plate, with the dough, reserving any extra dough. Place filling in dough. Use leftover dough to decorate top of cake. If using dough on top, sprinkle with cake decorations. Bake for 40 minutes. Cake is done when toothpick inserted in the center comes out dry.

I made this cake following all the directions to a T. I baked it in the oven set at 300 degrees. At 40 minutes , the cake was nowhere near finished. I think the oven temp was printed wrong. Please fix. I fixed the problem by raising the temp to 325. Baked it for another 20 minutes... By that time the crust was rock hard. Not a good recipe. :-(
