Snow Peas, Carrots and Cabbage

Ingredients

1 pound carrots, sliced crosswise

1 pound snow peas, ends trimmed

1/2 head green cabbage, thinly sliced

1 tablespoon red wine vinegar

2 tablespoons chopped almonds

Kosher salt and freshly ground black pepper

Directions

  1. Put a large skillet on the stove and fill with about 1 inch water. Add the carrots, snow peas and cabbage. Cover and steam over low heat until tender, about 7 minutes. Add the red wine vinegar and garnish with the chopped almonds. Season with salt and pepper to taste.
