Sophia's Place - Blue Corn Pancakes

Ingredients

2 1/2 cups all-purpose flour

2 cups blue corn flour

3/4 tablespoons salt

4 tablespoons sugar

4 tablespoons baking powder

4 cups milk

1/2 pound butter, melted

4 eggs

Directions

  1. Mix dry ingredients - flours, salt, sugar, and baking powder.
  2. Mix wet ingredients - milk, butter and eggs.
  3. Combine and mix but do not over mix, batter should be slightly lumpy. Let rest for 1/2 hour before adding to frying pan.

We were in Santa Fe a few years ago and had these blue corn pancakes. I followed the recipe exactly, but cut it in half. The baking powder amount is correct(perhaps the previous reviewer forgot the sugar). The pancakes rose nicely and had a beautiful texture and taste.
