Spiced Basmati Rice

2 cups white basmati rice

1 (3-inch) cinnamon stick

4 whole cloves

2 2/3 cups water

3/4 teaspoon salt

1 tablespoon vegetable oil


  1. In a bowl, wash the rice in several changes of cold water until the water runs clear. In a large heavy saucepan, combine the rice with the cinnamon stick, cloves, water, salt, and oil. Bring the mixture to a boil and cook the rice, covered, over low heat until the rice is tender and the liquid is absorbed, about 15 minutes. Fluff the rice with a fork.
