Spinach and White Beans with Garlic

2 garlic cloves, minced

2 tablespoons olive oil

1 pound spinach, coarse stems discarded, leaves washed, dried and chopped

15 ounce can white beans, rinsed and drained well

2 tablespoons balsamic vinegar


  1. In a skillet cook the garlic in the oil over moderate heat, stirring, until it is pale golden, add the spinach, and cook it, stirring, until it is wilted. Add the beans, vinegar, and salt and pepper to taste and simmer the mixture, stirring gently, for 2 minutes.
